Time for a quick weekend recap. Saturday morning I decided to take my long run over to Ben’s playoff softball game. Original plan, 9 miles, actual results, 7 miles, but good enough I think? And Ben’s team won the championship, obviously 🙂 That night we went out for Brad’s birthday for some dinner at Grafton Street and dancing time at Phoenix Landing. Happy Birthday Brad!
Clearly I was a fail on taking pictures this weekend. Until I spent my usual Sunday routine making lunches and I made these.
Turkey Meatballs in Homemade Tomato Sauce from Eat Live Run. Not nearly as pretty as the pictures on Jenna’s post, but definitely delicious. I’m a little jealous actually, since I made these for Ben’s lunch and not my own. My lunch salad of the week, red leaf lettuce, black beans, avocado, carrots (way too many carrots in the fridge right now) with olive oil and fresh lime juice. Also made a super fast and easy hummus recipe from Appetite for Reduction. It was so easy that I’m thinking that’s the end of buying hummus at the store, there’s a few different options in the cookbook such as a Jalapeno Cilantro hummus and I’m thinking maybe I should try to come up with a unique hummus recipe of my own.
Dinner tonight was one of my fall favorite salad recipes from Whole Foods, Arugula Salad with Roasted Butternut Squash and Prosciutto. Love the different textures, saltiness from the prosciutto and cheese, and the lemon bite in this salad.
I’m apparently very excited about squash this week since I had Spaghetti Squash for dinner last night, Butternut Squash tonight and am planning on partaking in some Acorn Squash another night this week. Which squash is your favorite? That’s a tough question for me, I definitely think that Spaghetti Squash is one of the coolest ones, I mean, how awesome is it that you roast it (or microwave) and then use your fork to pull out the deliciousness and it shreds just like spaghetti? Yes, I’m a nerd.
I still need to try Kabocha Squash before I make a final decision, right now I would put Acorn Squash at the top of my list for flavor.
Training plan for me pretty light again this week since I am 99% sure that I will run the Bay State Half Marathon on Sunday. The 1% chance is being reserved for this little annoying pain in my right leg that I am hoping is only related to my overdue need for a new pair of running shoes.
